This Hemingway Daiquiri riff is very well thought through. Gin is used instead of rum and Aperol is used instead of maraschino liqueur. The bitter grapefruit juice goes along well with the gin and the Aperol. All that bitterness requires a small dose of simple syrup to keep the drink balanced though.⁠ ⁠ In the recipe it's instructed to garnish with a high five (which is particularly hard when you are home alone).⁠ ⁠ Wow this is a good cocktail! We took another chance to use the Highclere Castle Gin [https://www.highclerecastlespirits.com/home.php] in a classic cocktail. This time we chose a Pegu Club, which is a spin on a a gin sour, with orange liqueur added.⁠ ⁠ Such a nice cocktail this is! It really lets the gin shine, at the same time evoking further interest wit hoses orange notes. This is another cocktail we created with the new coffee gin from Skånska Spritfabriken [https://spritfabriken.com/] - a Swedish distiller. As there is actually quite a lot of coffee flavour in the gin we didn't want to mix it with too overpowering ingredients. Sure, it's not really morning when we post this. But this cocktail can certainly be enjoyed also at evening time. It is of course the coffee liqueur, and the serving in cups that justify the cocktail's name.⁠ ⁠ The coffee liqueur mixes very well with the walnut liqueur. We are transforming a classic Rickey into a grapefruit variety just by switching regular simple syrup for grapefruit zest infused simple syrup. We made ours sous vide style, but just letting some zest infuse ready-made simple syrup should work well.
