We find this drink rather elegant, with its pale colour and its subtle ingredients. Coconut water is rather unused as a cocktail ingredient, but it works beautifully we think. It is sweet and has a lot of coconut taste, but it doesn't come with the thick creamy (sometimes overwhelming) textures that coconut milk does.⁠ ⁠ Also the chocolate notes here are so good. It was the name, and the colour. Both intrigued us enough to make this intense blue cocktail. While it will likely not actually kill a parrot, it would certainly make it dizzy. With both gin and akvavit in the mix, this is a potent one.⁠ ⁠ It's kind of a Pina Colada riff, where lighter coconut water replaces heavy coconut cream. It's made with coconut water rather than coconut milk/cream and we love how this refreshes an otherwise very heavy and sometimes overwhelming classic.⁠ ⁠ We also especially like the addition of sherry. Here we made a sour with Rubis Blanc [https://rubisblanc.com/en/homepage-en/], a French pure malt distillate. It's a clear product, making the sour look very transparent which we think is pretty sharp. ⁠ ⁠ Sour recipes are great because of their riffability. By changing the base spirit for something else, using lime instead of lemon and trying a flavoured syrup - you can end up with a completely different drink that should still be balanced and taste well as long as the above ratios are maintain

We thought this cocktail is fitting today, kust a few days before Christmas. It's a spicy mix of smoky mezcal, ginger and allspice.
