In the gin there are eleven different botanicals, one of them being local Belfast Black Mountain Heather. In this wonderful drink we're using Spytail [https://www.spytailrum.com/] rum, which is a new brand to us. It's based on aged rum from Guyana and Trinidad which is then aged a further three to six months in France, in the Cognac area, in barrels that used to hold - Cognac. Yummy!⁠ ⁠ The result is a super smooth, mellow and literally round rum that we immediately thought would work well as the base of tiki drinks. This desert-inspired drink combines tequila and Suze in an interesting way. There is not a lot of the Suze in the mix, and still it defines the drink quite a bit. Not sure what swan song really sounds like, but it's easier to imagine while sipping this bird-themed cocktail. Mixing brandy and applejack is quite brilliant. Also the added orange juice brings a sour note to the drink while the tiny amount of grenadine both colors and flavors the drink. The prop feathers are synthetic by the way, and they have been nowhere near a swan we can assure.
