The Sazerac is one of our favourite cocktails, and we usually do it with a split base of Cognac and rye. However in this version we switch Cognac for some very nice Brugal 1888 rum. It has a “dry” character that goes so well in this stiff cocktail where sweetness somehow should be kept low. The rum does add an interesting and refreshing twist to this classic cocktail, taking it into an ever so slightly lighter direction. We find this drink rather elegant, with its pale colour and its subtle ingredients. Coconut water is rather unused as a cocktail ingredient, but it works beautifully we think. It is sweet and has a lot of coconut taste, but it doesn't come with the thick creamy (sometimes overwhelming) textures that coconut milk does.⁠ ⁠ Also the chocolate notes here are so good. It's kind of a Pina Colada though not quite. It's made with coconut water rather than coconut milk/cream and we love how this refreshes an otherwise very heavy and sometimes overwhelming classic.⁠ ⁠ We also especially like the addition of sherry. For a while we've been wanting to mix a really luxurious, tequila-based cocktail. We figured this coffee infused rum liqueur would go well with a nutty partner, and then we saw the walnut liqueur in our cupboard… To then balance the sweetness a generous amount of fresh lemon juice was needed. And voila - a coffee, rum and nut sour was created. Why not call it the “Eye Nut”?⁠ ⁠ We think the combination worked really well. Coffee and nuts together is almost like a cookie, and the rum base further enhances the sweet features. However the lemon then really counters the sweetness
