Rum is a versatile spirit. It can be enjoyed both neat and in cocktails. It is a vital ingredient in several classic drinks, as well as in newer cocktail creations. Here are suggestions for three fantastic cocktails, made with Barceló Imperial. It is a rum made in the Dominican Republic, aged for up to ten years on oak casks. The rum tastes of caramel, vanilla, toasted nuts and wood - hence making it an excellent rum for mixing cocktails with.

DOMINICANA

45 ml rum
45 ml coffee liqueur
30 ml heavy cream
Stir rum and coffee with ice and strain into a chilled coupe. Shake the cream in a container and float it on top of the cocktail. Garnish with grated nutmeg.

60 ml rum
15 ml Falernum (can be swapped with simple syrup)
7,5 ml orange liqueur
22,5 ml lime juice
2,5 ml rich simple syrup
Shake all ingredients with fresh ice and strain into a chilled coupe. Garnish with a lime wheel.

RUM OLD FASHIONED
classic
60 ml rum
10 ml simple syrup
A few dashes of bitters (we like chocolate)
Stir with fresh ice and strain into a chilled glass, over a large ice cube. Garnish with a brandied plum or cherry.
