We had some elderflower liqueur left and wanted to use it in a new drink. We found The Confident Man and thought it sounded like a drink we would enjoy. And we did! This is a bittersweet cocktail that mixes grapefruit and Aperol but balances it with the sweet elderflower. The vodka is what creates the booziness in the drink. We don’t use vodka very often, but thought it worked well in this recipe combined with quite a few other ingredients with characteristic flavors. The Confident Man Recipe

We enjoy low ABV drinks that are still very much interesting, elegant and tasty. Bamboo is one of these cocktails, made with sherry and vermouth. It creates a dry but uplifting drink that you will definitely enjoy sipping on. We served this cocktail in new glassware. Not really coupes, rather tiny rocks glasses. A few days ago we featured the Anthony Edwards cocktail, and today it’s time for its close sibling (or maybe parent). In this reinvented version bourbon is used rather than gin and everything is served in a rocks glass rather than in a coupe. The gooseberry preserve and the apple juice is still there though, and together with the bourbon and the lemon juice it creates a much enjoyable grown up cocktail. It’s fun how swapping just one or two ingredients in a good recipe, can create a new taste

So there are two extra interesting ingredients in this one, gooseberry and chervil. Gooseberries are these large light green berries that at least in Sweden are quite common. People even grow them in their gardens. In this drink gooseberry preserve is used, which we think works well. If you want a slightly more sour version of the drink, just use less of the jam. And then there’s the chervil, an herb traditionally used in its dried state in several Swedish dishes. This made it extra fun to use

We still think vinegar in drinks are quite exciting. But it’s definitely about finding the right proportions when you use it. Take too little and you won’t even notice it’s in there. But take too much and you will end up with an undrinkable cocktail. In this recipe for the Apple Press we think the proportions are just right. We think it’s a ”clean” cocktail as you can actually taste all three individual liquid ingredients in the final result.
