We are transforming a classic Rickey into a grapefruit variety just by switching regular simple syrup for grapefruit zest infused simple syrup. We made ours sous vide style, but just letting some zest infuse ready-made simple syrup should work well. Using matcha green tea powder in drinks is fantastic. It gives the cocktail a pleasant earthy flavour and a mesmerizing green colour. ⁠ ⁠ This was also a very satisfying way to try out our bottle of Ichiros whisky that we bought in Japan a few months ago. This drink mixes rum and Fernet-Branca in an unexpected way, and it works fantastically well. The bitter Fernet and the somehow sweet rum marries, and is well supported by the sour/bitter grapefruit juice. ⁠ ⁠ Cinnamon syrup is super easy to make yourself. We pour simple syrup into a glass bottle and add a cinnamon stick. Then we just let it sit in the fridge for a week or so before we use it.
